Chicken Salad Wraps

This is a Farmers Wife Original.

2 Cups Shredded Chicken (I used leftover meat from a rotisserie chicken.)
2/3 Cups Red Grapes, cut in half
1/2 Cup Diced Pineapple
1-2 Celery Stalks, diced
1/4 Onion, diced
1/4-1/2 cup Mayo (to your taste and desired wetness)
Romaine Lettuce
Whole Wheat Wraps, or your favorite wrap

Combine chicken, grapes, pineapple, celery, onion and mayo in a medium sized bowl. Warm wrap in the microwave for about 10 seconds to make it more flexible. Put 1-2 leaves of lettuce on one end of the wrap, put chicken mixture on top, then roll up to make the wrap. Chicken will keep in the fridge for about 2-3 days, this would also be good with cracker's or on a sandwich or croissant.

This was delicious! I made it for a girls lunch and it was a huge hit. This mixture made 4 large wraps. It was light and yummy, a great summer meal! 4.5 stars.
